A crunchy crust envelops the aubergine slices and makes them super tasty... better than a real cutlet!

Cotolette of melenzane

Ingredients for 2 people

  • 2 Eggplant
  • 2 Egg
  • 100 g Bread crumbs
  • q.s. Salt and pepper
  • 100 g Grated caciocavallo
  • q.s. Origan
  • q.s. Olive oil
  • q.s. Flour
  • q.s. Parsley

Process


The process is very simple, just prepare all the ingredients first.
Cut the aubergines into slices and add a little salt.
Take a bowl and beat the eggs, adding the caciocavallo, oregano, salt and pepper.
Place the flour on one plate and place the breadcrumbs on another.
At this point, take the aubergine slices one by one, dip them first in the flour, then in the beaten eggs and finally in the breadcrumbs.
Then fry them in a pan with lots of olive oil, serve hot.
