Octopus salad

Ingredients for 4 people

  • 1 Kg Octopus
  • 100 g Olives
  • q.s. salt
  • q.s. black pepper
  • 1 Stalks celery
  • 3 Carrots
  • q.s. Parsley
  • 1 Lemon
  • 3 spoons Wine vinegar
  • q.s. Capers

Process


In this recipe we will use both the tentacles and the head, but if you want to use just the tentacles, go ahead.

Make an incision above the octopus's eyes and empty the head of its contents, then wash well under running water.

Put a pan full of water with salt on the heat and when it comes to the boil, immerse it for about 30 minutes.
Check the cooking by pinching the octopus with a fork.

In the meantime, prepare a salad with the vegetables. Cut the heart of a celery and the carrots into small pieces, add the capers and olives and season with salt, oil and pepper. Let it rest.
To this you will add the octopus tentacles cut into rounds, some lemon juice, a drizzle of oil, a sprinkling of pepper and the finely chopped parsley.
If you prefer vinegar, replace it with lemon.
