Ingredients for 4 people
- 1 Kg Potatoes
- 300 g Green beans
- 1 Red onion
- 3 Tomatoes
- 2 spoons Vinegar
- q.s. Origan
- q.s. Extra virgin olive oil
- q.s. Green and black olives
- q.s. Salt and pepper
Process
Cook the potatoes in their skins in plenty of salted water, while they are cooking, slice the onion finely. Also boil the green beans.
When the potatoes are ready, cut them into small pieces.
Complete the salad by adding the green beans, pachino cherry tomatoes to the potatoes and seasoning with vinegar, salt, oregano and pepper.
It is essential to use an excellent extra virgin olive oil , perhaps Sicilian.
