Panelle occupy the podium of "Street Food" in Sicily
The poor man's dish par excellence whose origins are lost over the centuries. The typical recipe is from Palermo, but panelle are now prepared all over the island.
Here we offer you a very simple version of the recipe, to be made immediately.
Ingredients for 6 people
- 600 g chickpea flour
- 1,5 L Water
- 1/2 Level spoonful of salt
- q.s. black pepper
- q.s. Parsley
- q.s. Olive oil
- 1 Lemon
Process
Panelle
Place the chickpea flour in a large pan and pour in the cold water little by little, trying not to create lumps. Add salt and pepper and continue mixing by placing the pan on the stove over low heat.
Stirring constantly, cook this mixture for 30-35 minutes until it comes away easily from the edges of the pan.
At the end of cooking, add the chopped parsley.
While still hot, pour the mixture into a pan and compact it by pressing it with a spoon.
Leave to cool thoroughly, then turn out the panelle and divide the dough into blocks. Cut several thin slices and fry them in hot olive oil, then place them on a sheet of kitchen paper to drain.
Now don't let them cool and put them in a nice soft sandwich... you'll feel like you're in Sicily!
