From June to September, in San Vito Lo Capo, a very special school comes to life: the Cous Cous school run by the women of San Vito Lo Capo.
Cous Cous in San Vito Lo Capo is not just a typical dish. It is part of the local identity, a symbol of the meeting of different cultures and a central element of daily life. With the school, this tradition is transmitted directly by those who have guarded it for generations: the women of the village. It is not just about learning a recipe, but about approaching a knowledge that has been built up over time, made of precise gestures, careful choices of ingredients, times to be respected.
Each lesson takes place in a simple but meaningful environment. The participants, guided step by step, learn to knead the semolina by hand, to steam the couscous in the *cuscussiera* and to prepare the traditional seasoning, often based on fish or vegetables, according to the season and the availability of the market. Each phase is carefully followed by the women of San Vito, who in addition to teaching, tell stories, anecdotes, and customs related to this dish. It is an opportunity to get to know first-hand how cooking becomes culture.
The initiative is part of a larger project that has led, in recent years, to the establishment of the Cous Cous Museum. Wanted by the Municipal Administration, in collaboration with the Pro Loco of San Vito Lo Capo and the Kalos Association, the museum is the first in Italy entirely dedicated to this food. The goal is to preserve and enhance the tradition of couscous, connecting it to the history of the territory, to migratory flows, to exchanges between the populations of the Mediterranean.
The museum is not conceived as a static space, but as a living place, where activities, workshops and meetings take place.
Participating in the school is simple: just book one of the sessions scheduled during the summer months. The workshop is suitable for everyone, even those who do not have particular skills in the kitchen. The important thing is the desire to get involved, to learn and to listen. In the end, in addition to having cooked the couscous with your own hands, you also have the opportunity to taste it together, in a moment of sharing.
