Two special awards for Italy. China awarded for the best presentation, the Doctors Without Borders team for the most technological cooking
Morocco is the undisputed winner of the prestigious Cous Cous World Championship, the Cous Cous World Championship, which took place during the Cous Cous Fest in San Vito Lo Capo. Chefs from 10 countries (China, Eritrea, Israel, Italy, Morocco, Doctors Without Borders, Palestine, Russia, Tunisia and Ukraine) competed in an event aimed at promoting cultural exchange and peace between peoples.
The excellent chefs Chaoui Hanae, chef entrepreneur and founder of La Medina, a charming bistro specializing in Moroccan cuisine and pastries in Milan, and Mourad Dakir, talented chef and owner of the renowned Moroccan restaurant Maison Touareg, have conquered the victory, beating all the opponents including the Chinese team and the team of Doctors Without Borders who reached the final.
The Moroccan team surprised the palates of the demanding technical juries, chaired by Oscar Farinetti, by presenting a traditional Moroccan couscous. "Our recipe goes beyond the mere preparation of a dish - said Chaoui Hanae and Mourad Dakir - it is a symbol of family, tradition and gratitude. This couscous contains the authentic flavors of the High Atlas mountains, in the Haouz province, where each ingredient is carefully selected and prepared with love".
The Italian team, composed of Antonino Ingargiola, chef of the "Bik Bak" ristopub in San Vito lo Capo and originally from Mazara del Vallo, together with Andrea Pellegrino, pastry chef at the Oasi bar in Castelvetrano, received two special awards. Their recipe entitled "Il ricordo" is inspired by memories of Sicilian tradition and culture. The Italian duo received the UniCredit awards for the most sustainable recipe and the award for the most original recipe, promoted by Conad.
The brilliant team of Doctors Without Borders, led by the talented captain Cesare Battisti, renowned chef and restaurateur at the prestigious Ratanà Restaurant in Milan, has triumphed in the prestigious Electrolux competition for technological innovation in cooking.
China instead won the Food Network award for the best presentation of the dish created by Giulia Liu, founder and owner of the renowned Chinese haute cuisine restaurant Gong Oriental Attitude in Milan, and Zuo Cuibing, master of traditional Chinese cuisine.
