Inside a sandwich, but also on their own, croquettes are one of the tastiest foods of Sicilian street food.

Potato croquettes

Ingredients for 6 people

  • 800 g Potatoes
  • 9 cloves Garlic
  • 1 Egg
  • 150 g Grated pecorino
  • q.s. Salt and pepper
  • q.s. Fresh parsley
  • q.s. Olive oil

Process


Boil the potatoes and puree them.
Mix the pecorino cheese , a pinch of chopped garlic and parsley into this mixture, then add a sprinkling of pepper and a beaten egg .

Now form small cylinders and fry them in a pan with plenty of oil .

It only takes a few minutes to form a golden crust, drain them on a sheet of kitchen paper and you're done.
The croquettes are ready and you will already be thinking about when to make them again.
