Excellent summer dish to be enjoyed even cold. They are sardine rolls with orange flavor.
Ingredients for 5 people
- 1 Kg Sardines
- q.s. Extra virgin olive oil
- 100 g Raisins (passolina)
- 100 g Pine nuts
- 1 spoon Sugar
- q.s. Salt and pepper
- 1 Bay leaves
- q.b. Fresh parsley
- q.s. Parsley
- 1 Orange juice
Process
Prepare the sardines, cleaning them from the bones and placing them open on a plate after washing them.
Brown the breadcrumbs in a pan with olive oil and then set a generous spoonful of it aside.
Now, in a bowl, mix the breadcrumbs with the juice of half an orange, the raisins, the pine nuts, the anchovy fillets, the chopped garlic, the sugar, the salt, the pepper, the parsley and a little 'olive oil.
Mix the dough well and stuff each sardine by rolling it up starting from the head towards the tail.
Arrange them on a baking tray, greased with oil, next to each other so that they do not open.
Insert a few bay leaves between them and pour a drizzle of olive oil over them. Sprinkle with the breadcrumbs you had set aside.
Bake for 10 minutes at 180°.
