A delight not to be missed
Tuna with sweet and sour onions is a typical Sicilian recipe, slices of red tuna fried in a pan and flavored with sweet and sour onions. The original Sicilian recipe requires that for this preparation the part of the tuna belly, called "surra", the fattest part, be used. As for onions, however, white onions are used.
Ingredients for 4 people
- 700 g Slice of tuna fish
- 2 Large onions
- q.s. White vinegar
- q.s. Sugar
- q.b. Olive oil
- q.b. Extra virgin olive oil
- q.b. salt
Process
Tonno in agrodolce
Cut the tuna steak into large slices and cut them into cubes . Dredge them in flour, salt them lightly and sauté them in a pan in hot oil , draining them as soon as they are golden, without letting them brown too much. Finally, in the same pan as the fish, fry the onions cut into thin wedges; salt them during cooking and once they are golden brown, sprinkle them with vinegar and sprinkle them with a spoonful of sugar . When a nice sauce has formed, add the tuna, then let it flavor for a few moments.
